Rye River Brewing Company ties “The Knot” with release of seasonal, limited edition NEIPA beer to celebrate Head Brewers’ upcoming nuptials
Ireland’s fastest growing and most decorated independent Craft Beer Brewery, Rye River Brewing Company, which is based in Celbridge, Co Kildare has released a new medium bodied NEIPA beer entitled “The Knot”. The new limited-edition beer celebrates Rye River’s Head Brewer Bill Laukitis’s upcoming wedding to his fiancé, Aoife. Alongside the best ingredients Bill has poured his heart and soul into crafting and perfecting this seasonal brew, which will feature as one of Rye River’s Seasonal, Limited Small Batch releases. The beer will also be served at the wedding of Leixlip based Bill and Aoife on 10th August to help guests from around the world celebrate the special day.
The Knot DDH IPA, which will be available in all good off licences from mid-August, has a medium bodied NEIPA base, with a low level of bitterness to the taste. Bill has ensured that this beer will combine Nelson Sauvin, Citra and Ekuanot hops to bring depth of taste and aroma to this Double Dry Hopped brew fermented with London Fog yeast. The nose will burst of crushed gooseberry, sauvignon blanc, grapefruit, lime, mango and papaya, all livened by a spritz of carbonation to awaken the aroma and tantalize the pallet.
While he may have found love in Ireland, Bill hails from the town of Holland, Michigan and had an interest in beer from an early age with Bell’s and Founder’s breweries on his doorstep. The Head Brewer spent his twenties travelling the world stopping and working in Norway, the Czech Republic, New Zealand and the UK before settling in Ireland in 2010, where he met Aoife.
Commenting on the backstory of the beer’s name, Head Brewer, Bill Laukitis said: “Brewing is both my career and passion, I wanted to do something special for my wedding to Aoife on August 10th. Aoife and I have bound our lives together over the last few years. Our marriage is a representation of sealing that bond, so we are tying the knot. While crafting this beer, I was inspired by a knot as a symbol of strength, as the ingredients become intertwined, they are becoming stronger in their union, just like a good marriage. I can (k)not wait to share this beer with not only my family and friends on our special day but with my beautiful wife, Aoife.”

The Knot will feature as one of Rye River’s Seasonal, Limited Small Batch releases while stocks last. While it’s the last brewed of the range for 2019, it’s not the last to be released. Rye River have another special beer on the way to warm you up in the colder months ahead, currently aging away in its barrels. The Knot will be available from mid-August for its limited run while stocks last at all off license’s that support great independent Irish craft beer.
